I personally had a very hard time finding any definitive answers on where is the best place to farm essences. I thought this might be a good place for all of us to throw out where we find the most success.
I farmed Dark hall on Monday. All day..... I ended up getting 20 highs, 60 mids, and 140 lows.... for the majority of the time I farmed 9th floor because I was looking for highs for Veromos. I had some people tell me that level 7 gives decent high results but after 2 refills I still had no highs to speak of. It wasn't till after I had been farming floor 9 for over 3 refills that i started getting highs... Sigh, the grind life.

B6 is the most efficient for mids, B7 is a decent catch-all that fishes for all the essence types, B10 has the biggest shift away from mids but you'll mostly be pulling highs/lows.
That being said, converting lows to mids helps a lot with their totals. I mostly run B10s and if they have free stamina hours, spam zerg B6s with all DPS. Well, everything but water, not worth wasting the extra time then.
If you're super behind on mids, free stamina hours speed running essence dungeons is just about the best thing you can possibly do anyway, just to futureproof yourself, because of how stamina-intensive it is to otherwise do for how fast they are.

Is that true with all dungeons as well as magic? I just found that the dark dungeon wasn't giving me any highs in 7 or 8.

Yeah. If you want highs, you want to be in B10 if possible, no exceptions. You will always have RNG skewing things when you want something. B6 will only drop highs, B10 keeps dropping mids.
People have one they swear by, but common opinion from Reddit is B6 is your catch-up place (assuming you've spent for upgrading lows to mids, don't do mids to highs) and B10 gives you the most highs over time, as it should be.
Magic, in particular, is great for those free stamina hours. You will always, always need magic mids, and since magic is more forgiving (well, not as much as water, nothing in there does damage), you're more likely to be able to handle B10 and more likely to start missing out on mids.
Some people swear by never going past B7 or B8, but those are usually time/stamina compromises. You definitely want to go past B6 for highs, though. They'll drop there, but it's a definite improvement in B7+.

I just did a bunch of runs in Hall of Wind. About 20% were high drops, 33% mids, everything else was lows and scrolls.

I kept track of the drops from the hall of water 6 and 7 and here are the numbers on 100 runs: B6: 83 lows, 68 mids, 5 highs, 34 US B7: 170 lows, 35 mids, 14 highs, 25 US So clearly if you want mids then you need B6 as Vakhir was saying and B7 or + for high. I usually don't go higher than B7 because it takes too much time and not 100% efficiency. I found it a bit surprising that the drop rate of low essences is so much higher in B7.
There is a legend saying that drop rates are different from element to element but I don't think that's true.
